Pear Walnut and Stilton Salad

This is Milla’s Pear Walnut and Stilton Salad. Salads don’t need to be boring. Adding fruit, nuts, seeds and different dressings can keep them fresh and interesting all year round. You can experiment. Here’s what we’re having tonight. Apologies for the lack of measurements. As you can tell, I’m not exactly a cookery writer.
Ingredients
Iceberg or Cos lettuce
One firmish pear
Handful of walnuts
Stilton
Cucumber (optional)
Dressing
Olive oil
Raspberry vinegar

Method
- Cut or tear up plenty of lettuce.
- Break the walnuts into smallishpieces
- Dice the pear, skin on
- Cut the stilton into small cubes. You don’t need much to make an impact
- Dice the cucumber if using.
- Add the pear, cucumber, most of the walnuts and most of the stilton to the letuce
- Make a dressing (put it in a jam jar and shake it is easiest) that is 2/3rds olive oil and 1/3 vinegar. I make my own raspberry vinegar because I absolutely love it in salad dressings. If you can’t lay your hands on any, use balsamic instead with maybe a touch of honey for added sweetness.
- Toss the salad with the dressing – but don’t do it until you’re almost ready to serve or else it will go soggy. You’ll need a couple of tablespoons. If you’ve made too much, it’ll keep in the jam jar.
- Sprinkle the remaining stilton and walnuts on top. I sometimes add sunflower seeds
- Enjoy!
